Each mono/echo has a symbol representing what items will be dropped after completion.
On two occasions, I have had a “unique ring” echo drop items that are not rings.
Once it was a relic, and just now boots. (both uniques).
The “unique ring” icon that you mentioned is the symbol for random unique drop echo.
If you are looking for target farmable rings/amulets you have to go to age of winter.
Everything target farmable has orange/green colour as echo reward.
