Does anyone know someone I can find stats about enemy mobs? In particular armor? In particular armor of dungeon bosses?

Mobs don’t have armour (or resists) unless they have a mod on them that gives them armour (can’t think of any that get this) or resists (some mobs do get some resists, but it’s usually like the void scorps that are resistant to void), or you’ve taken All Resist as a mono modifiers.
So armor shred for Tier 4 Dungeon bosses only sets their armor to negative?
Yes & they take more damage than they otherwise would (using the same formula as for damage reduction from positive armour).
Tunks Bestiary might help a little… altho not sure how much value knowing the details of mobs stats would help…

Good try but seems either all the armor is zero, the armor is unknown, or the armor is unknowable.
They have zero armour unless otherwise stated.
