Just a cut and dry opinion on what can improve for obvious reason’s and my experience playing so far.
My character level is 90 right now on a sentinel and I’ve hit a wall.
Gear - So far I have no problem’s with the gear early on, until you get higher level and the loot filter’s apply and like I said I’ve hit a wall with power, and survivability due to looking for said item’s that seem to never drop even when I set the filter lower than to be expected on a gear piece for example just searching for a gloves 2 out of 4 rolls within tier 2 or 3 no joke I haven’t seen one drop yet so I’m not sure but I’ve seen the chance to drop on some items and its kind of nuts.
Forge - So far the forge is alright to me not the best but I think it can be improved and create a massive benefit for anyone to take an average piece and make it special or even usable.
Runes to me should not have random chances on them it ruins my drive to continue to hunt and loot when knowing that gear piece drops and I have to risk losing it due to breaking the forging potential over removing an affix then farming again for X amount of time.
Rune of Shattering should always give you all affix’s on breakdown no question’s asked
Rune of Removal should let you just take off an affix but maybe make a draw back so you’re not just removing for free maybe show how much forging potential you will lose upfront
Glyph of Despair - should just let you seal whatever affix again just needs a drawback to gaining it rather than being random like with the rune above here
Forging potential - I get the idea but the number of potential should either be increased a decent amount or make it a set number of forge attempts for it’s rarity like a basic rare can get 5 chances when an exalted goes up to 10 something like that just allows more freedom of choice but with obvious risk of running it down in the process
So far I like this game and I want it to grow and succeed so that’s my feedback and opinion share it around I guess to help make better idea’s for the developer’s to run with

Couple of your points I want to address:
What are you risking? You mean when using rune fo removal and removing the wrong affix?
You should always try and craft promising gear pieces you find.
Yes a lot of them will fail and become useless, but a lot of gear pieces will also become really good.
You cna also use Glyphs of Despair instead of Runes of Removal as a means of freeing up affix slots. Its a bit more high budget but a lot safer, because it will not risk your item.
Runes of Removal do that already, the give you 1affix shard per tier fo the removed affix guaranteed, so basically if you want specific shards, especially rare one, use runes of removal instead. They are kinda High Budget Shatterings. And if FP runs out before removing the affix you want, you can still shatter it, with hbigher chances of getting the affix you want (because there are less affixes on the item)
The point of FP and crafting in generel is, that it is not predictable.
High FP is a general indicator for an item that you can craft a lot on, but its no guaranteed.
EHG wants crafting to not be predictable, because that makes the hunt for the perfect item far less impactful.
This also goes the otehr way, where sometiems items that have low FP still can become something truely oustanding if you just have a good luck streak.
People remember the bad moments mroe than the good moments, but I personally had a lot of oustanding crafting moments, where an item that I just wanted to try and craft for a medicre upgrade became almsot a BiS item that I was wearign until late endgame.
But from a few of you main points like
All of this sounds like you want a even more deterministic crafting with no “surprises”
I personalyl do not think that this would make crafting better. It would make it boring and stale, because its way to pedictable.
Also one thing to your point of “hittign a wall”
This sounds a lot like you are too strict with what you even try to craft on, or what your loot filters shows.
If you don’t find items with 2 or 3 Tier 2-3 affixes, reduce it to 2-3x Tier 1 affixes.
Or to 1x T4/T5 affix
You really should look out for gear that could potentially become better and not gear that is already better than what you are wearing.
